A few weeks ago I updated the photo on my Slow Cooker Pernil Recipe (this is on regular rotation in my house) and I often serve it with this quick slaw. I've since gotten so many emails on how to make the slaw, so here it is. Hope you enjoy!

Ingredients

  • 1/2small, about 5 cups head white cabbage, cored and shredded
  • 1/2red bell pepper, seeded and sliced thin
  • 1/4small red onion, sliced thin
  • 2tbspextra virgin olive oil
  • 5tspapple cider vinegar
  • 1/4tspkosher salt
  • fresh black pepper, to taste

Instructions

  • In a large bowl combine all the ingredients, toss to combine and let stand 15 minutes before serving.
