All the flavors you love from buffalo wings without all the added fat. A delicious, low-carb lettuce wrap topped with shredded carrots, celery and blue cheese dressing. I topped it with skinny blue cheese dressing (not included in n.i.) or you can top it with my skinny ranch.

How To Make Buffalo Chicken Lettuce Wraps

Lettuce wraps are low-carb, keto, gluten-free and low calorie, and don't interfere with the flavors of the filling. A few tips when making lettuce wraps:

  • Look for lettuce leaves that are large enough to hold the filling. I like to use iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also great.
  • The leaves of butter or boston lettuce are smaller, but also wonderful.
  • If you prefer, you can turn this into a big chopped salad by simply serving this over a bowl over chopped lettuce.

And since so many are asking, although I have and love my , I still love my slow cooker! I have the  (affil link). I love it because you can adjust the time you want it to cook, and it automatically turns to warm when it's done. It also has a probe for meat that automatically shuts off when done. I hated my old crock pot, it burnt everything and my food had a weird taste. This slow cooker is so great, I actually own several!

Buffalo Chicken Lettuce Wraps (Slow Cooker, Instant Pot)

Ingredients

For the chicken:

  • 24oz3 boneless skinless chicken breasts
  • 1celery stalk, diced
  • 1/2onion, diced
  • 1clovegarlic, minced
  • 16ozfat free low sodium chicken broth
  • 1/2cupcayenne pepper sauce, I used Frank's

For the wraps:

  • 6large lettuce leaves, Bibb or Iceberg
  • 1 1/2cupsshredded carrots
  • 2large celery stalks, cut into 2 inch matchsticks

Instructions

Slow cooker method:

  • In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough).
  • Cover and cook on high 4 hours.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest.
  • Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!

Instant Pot method:

  • Combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough) in the Instant Pot. Cover and cook high pressure 15 minutes. Natural release.
  • Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the pot with the 1/2 cup broth and the hot sauce and saute 2 to 3 minutes. Makes 3 cups chicken.
  • To prepare lettuce cups, place 1/2 cup buffalo chicken in each leaf, top with 1/4 cup shredded carrots, celery and dressing of your choice. Wrap up and start eating!
