Tamil Recipes Peerkanga Kothukari Poriyal. This is a specialty of my mother from Madurai, Tamilnadu. The vegetable is available in Indian and sometimes Asian grocery stores in America. This is called Peerkangai or ridge gourd. You need to develop a taste for this vegetable because it is a bit slimy but tasty.

By adding ground beef or mutton you change the taste and make it to taste extra ordinary Tamil samayal of south Indian, as it combines the ground meat with this vegetable in an exceptionally tasty texture. Texture changes and also the taste as they both melt into each other and form an aroma if Tamil cooking so special and it just plays with your taste buds. Ingredients

  • Ground beef 1/4 lb
  • Peerkangai 4
  • mustard seeds 1 tsp
  • oil 2 tbsp
  • urid dall 1 tsp
  • curry leaves a few
  • ginger & garlic 1 tbsp paste
  • turmeric pdr 1 tsp
  • chili pdr 1 tsp
  • cloves 4
  • cinamon 1 tsp
  • salt to taste


Method

  1. For preparing Peerkanga Kothukari Poriyal Recipe first boil the ground beef with ginger & garlic, turmeric pdr, chili pdr. cloves and cinnamon
  2. Clean the peerkangai, remove skin and the seeds inside
  3. Cut into small rectangular pieces of 1 inch.
  4. Pour oil in a frying pan and add mustard seeds and urid dal
  5. When the seeds pop add curry leaves
  6. Now add the peerkangai and stir fry
  7. Add 1/2 cup water and cook it for 2 minutes or so
  8. Now add the boiled ground beef to it and sitr well
  9. Taste to see if the peerkangai is cooked and then take it out
  10. Serve as side dish for meals
