Cauliflower in Dahi Curry Recipe

Ingredients:

  • Cauliflower – 1 crown
  • Green Peas – 1 cup
  • Onion – 1 big or 2 small
  • Green Chilly – 2
  • Tomato – 2-3
  • Ginger garlic paste – 2 tsp
  • Cumin seeds – 1/2 tsp
  • Coriander Powder – 1 tblsp
  • Turmeric Powder – ¼
  • Chilly Powder – 1 tspv
  • Cinnamon – 1
  • Cloves- 2
  • Star anise – 1
  • Cardamom -3
  • Fennel seeds
  • Coconut milk/ Yogurt – 1 cup
  • Salt – to taste
  • Oil – 2 tblsp
  • Curry leaves – 5
  • Cilantro – for garnish


Preparation Method:

  1. Cut the cauliflower into florets and soak in hot salted water for 5 minutes, so that impurities can get separated.
  2. Heat a pan and add oil, splutter some cumin seeds, Cinnamon, Cloves, Star anise, Cardamom, Fennel seeds, and curry leaves.
  3. Now add the onions and green chilly and fry it, till it turns golden brown.
  4. Now add the ginger garlic paste and sauté for another minute.
  5. Add the tomato puree and cook it for 5 minutes. Now add chilly powder, coriander powder, turmeric powder, and salt.
  6. Add the cauliflower florets and green peas, now Sauté for a minute.
  7. Add the coconut milk or beaten yogurt to this.
  8. Add more water if you want more gravy. Bring it to a boil.
  9. Reduce the flame, cover with a lid and let the gravy simmer till the oil separates.
  10. Garnish with cilantro and serve.
