Tamil Recipes Potato Curd Fry is another side dish used for in combination with main courses like rice and sambar or chaptis and bread. It is also another tasty south Indian samayal and is more popular actually in the north than in the south though we also use it with different varieties and combinations.

Ingredients

  • Potato 2 cups
  • Onions 1 cup
  • Yogurt 1 cup
  • Green chili 2
  • Ginger/garlic paste 2 tbsp
  • Curry leaves 1 prig
  • Corn flower ½ cup
  • Oil 3 tbsp


Method

  1. For Potato Curd Fry Recipe first peel and ½ boil potatoes do not let it boil fully as you have to cook again with curd
  2. Add oil in a frying pan sauté the onions. Add now the ginger and garlic paste and fry them well
  3. Add all other ingredients and fry them together well
  4. You should add water slowly and in small quantities to the frying pan not to stick and also not to dry up
  5. Add the already boiled potato and cover the lid
  6. Now in another small cup mix the corn flower in cold water and stir well not to form any clumps
  7. The last item you should add slowly while stirring briskly is the corn flower already dissolved in water
  8. Now after the potatoes are fully cooked turn off the heat and serve it steaming hot

Wheat Vellum Alwa Recipe

Tamil recipes Wheat Vellum Alwa is a popular dish in south India  It is usually made of sugar as well. But vellum which jaggery is healthier and inexpensive. So I decided to show that but if you cannot get vellum please do not be worried just use sugar though the proportions are different, use 1/4 less for sugar.

The whole process for Wheat Vellum Alwa recipe is simple enough except for the ‘patham’ the consistency as we call it. If you don’t get that right  it is either too hard or too soft when it sets. The correct mixing is always done only with concentrated supervision Do not leave it and go at the end when it is all coming together. Stay with it till the end and stir well till you let it to set. Adding nuts and raisin is up tot you, it taste better.

Ingredients

  • Butter 1 cup
  • Wheat flour 1 cup
  • Corn starch 1 tbsp
  • water 1 cup
  • Vellum 1 cup
  • cardamom 4
  • salt 1/2 tsp


Method

  1. In a frying pan add the wheat flour and stir fry to get the roasted aroma for about a1 minute or two
  2. Take a good large pan and add butter, let it melt
  3. Now add the roasted flour to the butter. Reduce the heat between low to medium
  4. Fry in butter for about 3 to 4 minutes or just a bit longer if you do not smell the flavour of alwa.
  5. Separately in a pan mix the vellam with 1 cup water on low heat. Mix corn starch separately and stir well without any lumps
  6. Add the vellum water slowly into the fried mix and stir quickly. Now add the corn starch water also
  7. Now once you have reached the smooth mixture of always consistency just pour it onto a serving dish
  8. Smooth the upper layer and let it set for about 5 minutes
  9. It is ready to serve

Seeraga Kulumbu Recipe

This is the popular puli kulambu variety with a touch of seeragam (cumin). This is a comon everyday curry for most south Indians which can be eaten with rice, idli, dosai and idyappam.

Ingredients

  • Tomato 1
  • Onions 1
  • cumin (seeragam) 4 tsp
  • Garlic pods 6
  • turmeric powder 1 tsp
  • chili powder 2 tsp
  • Coriander powder 3 tsp
  • Tamarind paste 1 tsp
  • curry leaves 1 prig
  • Mustard seeds 1 tsp
  • urid dal 1 tsp
  • water 1 cup
  • oil 1/2 cup to sauté


Method

  1. For seeraga Kulumbu recipe first cut tomato and onions into small pieces
  2. Take a frying pan. Pour the oil and heat it
  3. Now you can add mustard and urid dal. Fry till mustard pops, add curry leaves
  4. Add tomato, onions, and garlic. Fry well
  5. Add the cumin, chili, coriander, turmeric and tamarind paste with little bit of water to wet and not get dried up
  6. Bring it to a boil and add one or more cup of water. Let it simmer for till the oil floats to the top
  7. Serve hot with rice, idli, or dosai
