Medu Vada

Tamil Recipes Medu Vada is a kind of doughnut with a hole in the center and it is usually not sweet but spicy. It is made of urid dal flour and eaten with sambar and chutney. It is a famous snack and breakfast food in Tamilnadu and other south Indian states. It is an integral part of tamil cooking.


  • Urad daal  1 cup
  • Salt – to taste
  • Ginger minced– 1 tsp
  • Green Chilies – 1
  • whole Pepper – a few
  • Perungayam – 1/2   tsp
  • Oil  – 2 or 3 cups


  1. Urid dal must be soaked in water for about 4-6 hrs
  2. Add the soaked urid dal to a wet grinder to grind adding water in small quantities but be careful as too much water will take in too much oil and be flat
  3. Take the  batter  out onto a bowl, add Salt, Ginger, Green Chilies, Black Pepper and perungayam and mix & stir well
  4. In a frying hollow wok pour oil and wait for itto heat up
  5. Turn the flame to medium heat
  6. It is an art to shape the batter inot vada. Use your hands by taking hadnful batter and flatten and slwoly bring to doughnut shape and make a hole with your middle finger
  7. Now slowly and carefully slip into the oil, it may stick so you can rub water in the other hand
  8. Once it it is brown turn the other side
  9. Do not leave it in oil longer it nay get hard and stiff
  10. As sson as you see lightly brown the other side take it out
  11. It is usually served with sambar or chutney
