Madurai Avial Recipe

Tamil Recipes Madurai Avial is a modified simple Kerala Avial. All original Avial preparations come from Kerala as far as I know, at least the name. Avial literally means boiled material. So these are boiling method of samayal. Avial is also usually a combination of a number vegetables mutually suitable and agreeable to each other and should compliment the ingredients.


  • Vazhakkai 2
  • Kathirikai 2
  • Murungakai 10 pieces
  • White poosanikai 10 pieces
  • Green Chili 4
  • Cumin powder 2 tsp
  • turmeric 1 tsp
  • coconut 1/2 cup
  • oil 2 tbsp
  • salt 1 tsp


  1. Peel the skin and cut the vazhakkai into rectangular pieces
  2. Cut each vazhakkaiinto 4 pieces lengthwise
  3. cut murugakai into 3 inch pieces
  4. Peel the skin and cut vellai poosanikai into rectangle or sort of cone shape
  5. Cut coconut and chili into small pieces, add cumin and turmeric. Grind them into a masala. The consistency must be a little coarse not too smooth
  6. Boil murungakai separately and keep it ready to mix
  7. Take a large vessel pour oil and heat up
  8. Add vazhakkai and vazhakkai and stir fry a bit for about onw minute
  9. Add the ground masala and salt and just stir fry a bit
  10. Add one cup of water and the poosanikai now
