Pan Seared Shrimp
For perfectly cooked, moist shrimp every time. Cook the shrimp in two batches to avoid overcrowding the pan. Sear the shrimp on one side only, and allow the heat of the pan to cook the other side.
Pan Seared Shrimp
Ingredients
- 2tspvegetable oil
- 1 1/2lbsshrimp, peeled and deveined (weight after peeled)
- 1/4tspsalt
- 1/4tspground black pepper
- 1/4tspcrushed red pepper
- 2tbspdry parsley
- lemon wedges

Instructions
- Heat 1 tsp oil in 12 inch skillet over high heat until smoking.
- Meanwhile, toss shrimp with salt, pepper, parsley and crushed red pepper.
- Add half of the shrimp to the pan in single layer and cook until edges turn pink, about 1 minute.
- Remove pan from heat, flip shrimp using tongs and let it stand about 30 seconds until all of the shrimp is opaque except for the center.
- Transfer to a plate and repeat with the second batch and the remaining teaspoon of oil.
- After second batch has stood off the heat, add the first batch to the pan and toss to combine.
- Cover skillet and let shrimp stand for 1 - 2 minutes.
- Shrimp will now be cooked through.
- Serve immediately with lemon wedges.

This is late (and obvious), but 1.5 lbs is 24 oz... 24/4 = 6 oz raw shrimp per serving.
I'm not sure I understand the points for this. 1 1/2 lbs of shrimp is called for. If this is 4 servings, it should be 8 oz. of shrimp each. 8 oz. of shrimp is 5 points. How is this recipe only 3 ww points? I'm not even sure if the oil is figured into this as 1 tsp of olive oil or veg oil is also 1 point each?
Ok, it's 2 teaspoons, not tablespoons. I'll update it now. Also, 24 oz of raw shrimp is approx 18 oz cooked. Make sure you weigh the shrimp after you remove the peel to make it accurate.
It has to be 2 teaspoons of oil since 2 tablespoons of oil has 7 points and the points for the entire recipe are 12 (4 servings x 3 points) and 1.5 pounds of raw shrimp is 15.5 points. These numbers are from the online calculator.
Given that the shrimp alone are 15.5 points then wouldn't each serving have to be at least 4 points without any oil?

Is it 2 tablespoons or 2 teaspoons of oil?
The ingredients say tablespoons, the fist line of the instructions say heat 1 tablespoon and then the 5th line says to add the remaining teaspoon of oil.
