Shrimp Zoodles Parmesan for Two

Baked Shrimp Parmesan over Zucchini Noodles ' an easy, light and delicious shrimp dish made in under 30 minutes!
I love shrimp parmesan and make it often at home because it's so much healthier to make it yourself. Rather than frying the shrimp like you'd get from a restaurant, I bake them in the oven until golden.

I've been using Tuttorosso tomatoes for years ' if you've been following me from the beginning, you probably already know that they're my crushed tomato of choice.

This recipe is simple, you'll want to have everything prepped and ready before you start making this, because it comes together fast. Have your zucchini cut and ready before you start, I prefer a thicker zucchini noodle so I used the thicker noodle blade of my  to cut my zoodles. Enjoy!


Shrimp Zoodles Parmesan for Two
Ingredients
For the Shrimp:
- 8ozpeeled and deveined jumbo shrimp
- fresh black pepper, to taste
- 1large egg, beaten*
- 3tbspwhole wheat Italian seasoned breadcrumbs
- 1tbsppanko crumbs
- 1tbspgrated parmesan cheese
- olive oil cooking spray
For the Zoodles:
- 1tspolive oil
- 2clovesgarlic, crushed with the side of a knife
- 1 1/4cupscrushed tomatoes, I always use Tuttorosso
- kosher salt and pepper, to taste
- 2medium zucchini, 14 oz total, spiralized with the thicker blade, and cut into 6-inch lengths
- 1ozshredded mozzarella cheese, I love Polly-O
Instructions
- Preheat oven to 450°F. Spray a baking sheet with cooking spray.
- Put the beaten egg in one bowl, and the breadcrumbs, panko and parmesan cheese a second bowl.
- Wash and dry the shrimp. Season lightly black pepper, then put a few at a time in the bowl with the egg to coat. Then into the breadcrumb mixture to coat, then on a baking sheet.
- Spray the top of the shrimp generously with oil then bake in the middle rack for about 6-7 minutes.
- Turn shrimp over then cook another 3 minutes or until cooked though.
- In a large oven safe skillet heat the oil over medium heat.
- Add the garlic and cook until browned, about 2 minutes. Add the crushed tomatoes, salt and pepper and simmer on low 5 to 6 minutes.
- When the shrimp is done, add the zucchini noodles and cook 1 1/2 to 2 minutes tops, stirring to combine with sauce.
- Place the cooked shrimp over the zoodles, top with cheese and place under the broiler 1 minute until the cheese melts.

I made this tonight for the first time-was delicious- I had zoodles and my husband had thin spaghetti (he doesn't eat zucchini) – where it was the the two of us I added a little hot pepperÂ

I have made this two times; it is my one of my husband's favorite Friday Lent meals!!! He even loves the Zoodles – doesn't miss the pasta at all – and neither do I for that matter. I used Pepperoncino flavored olive oil instead of regular to give it a little kick and I didn't have any whole wheat bread crumbs so I used regular Italian bread crumbs and adjusted my points accordingly (adds 1 point). This is an amazingly delicious and filling meal! I am new to healthy eating and was reluctant to use zoodles. If you didn't know it was a skinny taste recipe you wouldn't guess it was a healthy or light recipe! I made this for my wife last week and it was such a hit I made it again (by request!) tonight. I saw this yesterday & thought, well, low carb, shrimp, this MUST be healthy. I went out & got the ingredients today and OMG! IT was unbelievable. I made it with vegan mozzarella & just adjusted the sauce to my liking (a little sugar..ugh!) I will definitely be making again. so so so great!Â

Delicious recipe. I doubled for 4 people and used 16 oz peeled and deveined shimp and needed 2 whole eggs and needed to double the breadcrumb mixture to coat them all (I did not have jumbo, so I used large which could have attributed to some of that).
I used the whole can of crushed tomatoes (since there would have been like 1/2 cup left), I doubled the garlic and added a smidge of crushed red pepper flakes....my sauce simmered closer to 15 minutes while I prepared the zoodles.
I found 3 large zucchini to be plenty of zoodles (I had bought 4).
My guests are two 24 year old girls who eat very healthy and they really enjoyed this dish!
Finally got around to trying this one, and it was a hit! Now I'm going to hunt down some of your other breaded shrimp recipes!

I couldn't find whole wheat bread crumbs....if I use regular Italian bread crumbs will that change the point value?
This isn't recipe related but how do you like your marble countertops? Have you had lots of etching or scratches? They are beautiful but I hear so many different opinions about them!
Just made this last night and it was soooo good! My fiance "accidentally" topped it with both the mozzarella and parmesan when it went in the oven. It was definitely a happy accident!
How does the zucchini taste in place of pasta? I tried using spaghetti squash once because everyone said it tastes just like regular spaghetti once you put the sauce on it. It didn't taste anything like spaghetti though. (not a bad thing, just not what I was going for). I might be able to convince my husband to buy a spiralizer but only if I'm sure I'll actually eat the foods. ð
If you're looking for the same taste and texture of pasta, it's not going to match what you're expecting, BUT, I've tried the spaghetti squash in place of pasta as well and thought it was just awful.
The Zoodles are actually much more similar I find. My husband was really doubtful (even though he loves his veggies and eats way more of them than I do!). I bought a spiralizer anyways and 'surprised' him with Gina's skinny low mein – that dish alone sold him!
Personally I'm not a fan of raw zucchini, but the dishes where you cook it for a minute or 2 really softens it up and I find its just as filling and satisfying/comforting as pasta, and I found we weren't really missing the pasta at all.

Please pardon my stupid question-the only shrimp I have is Trader Joe's frozen medium sized cooked shrimp, which I will thaw first. How long should I bake the shrimp in the oven if it is already pre-cooked? Thank you.
You shouldn't use pre-cooked shrimp for this recipe.
Looks great, we'll have to try it! Loving my spiralizer, but other than making noodles out of zucchini I'm totally lost at what else I can do with it.
To the person who posted above about how to make 'non-watery' zoodles, a trick I picked up from another site said to cook your zoodles first (only for 1-2 minutes), and let them rest in a dish like you would if you were cooking meat.....that way some of the water is released. Pour out the water, then add them back once the dish has come together. This adds an extra step, but it's worked great whenever we've done it, and keeps the sauce from getting too watery,

I doubled it an it worked just fine! Make sure your pan in large enough!

Gina, this was GREAT! I made it last night. All we had were precooked salad shrimp in the freezer, so it took quite a while to bread them, but it was worth it! Extra bites of shrimp actually made it that much better. My boyfriend gave it 8 stars out of 5. Thank you!!

I have loved your recipes for years, but I have no intention of buying a spiralizer. I'm hoping for summer you'll change it up a bit.
You can use a mandolin to cut the zucchini or even a knife.
I use a julienne peeler to make zoodles and it works great too!

I love your recipes, Gina, but man I am getting tired of the spiralizer in every other recipe lately! I hope you'll start mixing things up a bit more.
I have over 1200 recipes on the blog so just use another from the archives.
You can always use pasta instead of the zoodles if you wish too. Don't have to follow every recipe EXACTLY as written!

I don't want to see the spiralizer recipes go away just because a few people are tired of them, because they make a great alternative for pasta dishes, and they are great ideas for vegetarian dishes. Maybe instead, whenever you have a recipe like that, you can specify "either/or" to make everyone happy ð

Try pre-cooking your zoodles first for a minute or 2, then take them off the heat and let them rest while you finish the rest of the dish. They should release a fair bit of water, pour that out, and then add them back to the dish.
I put my zucchini noodles in a colander and sprinkled them with a small amount of Kosher salt and let them sit for a 1/2 hour. Worked perfectly =)
